Abstract

This dissertation about the business plan is written as the final part of summer course of Hotel Management. In order to examine: The business plan of restaurant with the new concept and style, east west food (fusion kitchen), to attract customers and the satisfaction. Qualitative and quantitative research are conducted to complete this dissertation and will be divided into two parts. The first part concerns about literature review of hospitality industry especially in food sector. This food sector is the greatest growth of all hospitality industries with over than 9,000 restaurants in the Netherlands according to the Board of Horeca and Catering. This amount makes the tendency of entrepreneur to join the business and earn profit from it. The second part concerns about the business plan in general. Business plan can be one way to help entrepreneur to do their research and validate their business idea. Understanding and knowledge created by the process of business plan will prepare the business for any changes that it may face, and so enable it to adjust quickly. These part are also the main part of the dissertation and a business plan of Sunny Side Restaurant.
